Step by step recipe

  1. Roughly chop the feta.
  2. Place the feta into the blender bowl.
  3. Pour the olive oil into the blender bowl.
  4. Place the raisins into the blender bowl.
  5. Place the chopped chives in the blender bowl.
  6. Place the chopped garlic in the blender bowl.
  7. Blend together until the mixture is even. Empty the content of the bowl into a small dish.
  8. Clean the zucchini, chop the two ends and peel it. Cut into very small cubes.
  9. Add the couscous to the chopped feta cheese, mixing well and then add the zucchini delicately.
  10. Cut the pastry sheet into 4. On each of the triangles, place 0.5 Oz of the cheese mixture in the shape of a sausage 2 or 3 inches in length.
  11. Roll the pastry starting at the largest side to form a cylinder containing cheese. Tuck the ends in. Repeat this to make as many brik crunchies as needed.
  12. Place the crunchies on an oven baking tray. Brush them with a little olive oil. Bake at 400°F for 10 mins until the crunchies are golden.
